Oven Baked Lamb Maghluba by Rida Aftab

Ingredients:

  • Lamb or Mutton 1 kg
  • Rice 1 kg
  • Black pepper 1 tsp
  • Cumin 1 tsp
  • Salt 1-1/2 tsp
  • Olive oil 4 tbsp
  • Brinjal 1
  • Fried potatoes 4
  • Green coriander 1/2 bunch
  • All spice powder 2 tsp
  • Garlic 6 cloves
  • Ginger 1
  • Water 4 glasses

Method:

  1. Put garlic cloves, ginger and salt in lamb or mutton and boil it.
  2. When meat tender, separate stock or meat.
  3. Then fry meat in olive oil nicely and take out when golden.
  4. Now put stock, black pepper, cumin, salt and all spice powder in this pot and cook it.
  5. When boils, add rice.
  6. When water of rice dries, then take out in dish.
