Cherry Coconut Cake by Shireen Anwer

Ingredients:
- Butter 8 oz
- Sugar 1-1/2 cup
- Glazed cherries 1/2 cup
- Eggs 4 separated
- Flour 3-1/2 cup
- Baking powder 1 tbsp
- Orange juice 1/2 cup
- Desiccated coconut 1/2 cups
- Flaked coconut 4 tbsp
Method:
- Beat butter and sugar in one bowl until light and fluffy.
- Now put egg yolks one by one and beat it nicely.
- Now strain desiccated coconut, flour and baking powder.
- Then add one by one in mixture with orange juice, cherries and some flour.
- Now put in cake mixture and mix it.
- Then beat egg whites until it is mixed nicely.
- Now fold in batter and mix it nicely.
- Then grease pan and put mixture in it.
- Now sprinkle flaked coconut and bake on 180 degrees C for 1 hour.
