Chicken Handi by Zarnak Sidhwa

Ingredients:
- Boneless chicken 1/2 kg
- Chopped onions 2
- Oil 1/2 cup
- Yogurt 1 cup
- Ginger garlic paste 1 tbsp
- All spice powder 1 tsp
- Salt to taste
- Crushed red chilies 1 tsp
- Red chili powder 1 tsp
- Lemon juice 4 tbsp
- Green chilies 2
- Coriander leaves a few
- Orange color 1 pinch
Method:
- Blend together raw onion with 1/2 cup water.
- Now in a bowl add onion mixture, ginger garlic paste, all spice powder, salt, lemon juice, crushed red pepper, orange color, red chili powder and yogurt. Mix it well.
- Marinate chicken in this mixture for 30 minutes.
- Heat oil, add marinated chicken with mixture, cover and cook on low flame till chicken becomes tender and oil comes on surface.
- Put hot coal in pan and add few drops of oil on coal and cover the pan immediately to give the aroma to gravy.
- Garnish with coriander and green chilies, sere with naan.
