Fried Prawns With Spicy Sauce by Zarnak Sidhwa

Ingredients:
- Prawns 1/2 kg
- Eggs 2
- Water 2 tbsp
- Panko bread crumbs 1 cup
- Flour 1 cup
- Salt to taste
- Pepper to taste
- Oil for frying
Sauce:
- Chicken stock 3/4 cup
- Oyster sauce 2 tbsp
- Chili paste 2 tbsp
- Corn flour 1-1/2 tsp
Method:
- Butterfly the prawns by cutting vertically down the back of the prawn.
- Leave tail on.
- Season with salt and pepper.
- Heat enough oil to deep fry them.
- Put bread crumbs in a dish.
- Add seasoning to taste and mix well.
- Put flour in a separate shallow dish.
- Beat the eggs and water together.
- Dip the prawns in the egg-water mixture.
- Add the prawns to the flour.
- Toss to coat.
- Dip again in egg-water mixture.
- Toss in bread crumbs.
- Fry in hot oil until golden.
