Mini Fish Burgers by Zarnak Sidhwa

Ingredients:
- Fish 400 gm
- Mashed potatoes 2 large
- Mixed herbs 4 tbsp
- Pickled cucumber 2 tbsp
- Black peppercorns 1 tsp
- Salt to taste
- Oil for frying
- Burger buns 4
- Cream cheese 4 tbsp
- Lettuce leaves for garnishing
- Pickled cucumber for garnishing
Method:
- Combine fish, potatoes, herbs, cucumber, peppercorns and salt in a bowl.
- Mix well and divide the mixture into four equal portions and shape them into patties. Heat oil.
- Halve burger buns and place them on it.
- Cook till light golden and crisp. Set aside.
- Heat oil and cook the patties, turning sides, till evenly cooked on both the sides,
- To serve, place the base of the bun on the plate.
- Apply cream cheese, top with some lettuce leaves and cucumber.
- Place the hot patties on top and close with the other half of the bun.
- Serve immediately.
