Ingredients:

  • Eggplant 1/2 kg
  • Paprika 1 tsp
  • Olive oil 4 tbsp
  • Cumin 1/2 tsp
  • Black pepper 1/2 tsp
  • Salt to taste
  • Lemon juice 3 tbsp
  • Parsley 1/2 tsp
  • Chopped tomatoes 4
  • Chopped olives 10
  • Garlic 1 tsp
  • Red chili flakes 1 tsp

Method:

  1. First peel eggplant, put salt and keep it. After that, wash it.
  2. Now heat olive oil, put garlic and eggplant and fry on high flame.
  3. Then put chopped tomatoes, paprika, cumin, black pepper and red chili flakes and cover it.
  4. When water dries, add lemon juice and mix it.
  5. In end, take out in dish, put parsley and chopped olives and serve.
