Moroccan Eggplant by Rida Aftab

Ingredients:
- Eggplant 1/2 kg
- Paprika 1 tsp
- Olive oil 4 tbsp
- Cumin 1/2 tsp
- Black pepper 1/2 tsp
- Salt to taste
- Lemon juice 3 tbsp
- Parsley 1/2 tsp
- Chopped tomatoes 4
- Chopped olives 10
- Garlic 1 tsp
- Red chili flakes 1 tsp
Method:
- First peel eggplant, put salt and keep it. After that, wash it.
- Now heat olive oil, put garlic and eggplant and fry on high flame.
- Then put chopped tomatoes, paprika, cumin, black pepper and red chili flakes and cover it.
- When water dries, add lemon juice and mix it.
- In end, take out in dish, put parsley and chopped olives and serve.
