Methi Bhaji Bedo by Tasneem Mapara

Ingredients:
- Fenugreek leaves 8 bunch
- Onion chopped 2
- Oil 1/4 cup
- Salt to taste
- Fresh green peas 2 tbsp
- Turmeric powder 1 tsp
- Coriander powder 1 tsp
- Ground red chilies 1 tsp
- Carrot 1
- Tomatoes chopped 2
- Ghee 1 tbsp
- Eggs 4
- Ginger garlic paste 1 tsp
Method:
- First wash fenugreek leaves nicely and keep it.
- Now heat little oil in pan and saute onion chopped until pink.
- Add ginger garlic paste, salt, coriander powder, turmeric powder, ground red chilies and onion in one bowl and mix it.
- Then put carrot and fresh green peas and cook for few minutes until peas becomes soft.
- Now add fenugreek leaves, tomatoes chopped, eggs mixture and ghee and mix it.
