Cherry Meringue Surprise by Shireen Anwer

Ingredients:

  • Cake rusk 250 gm
  • Cherries 1 tin
  • Egg yolks 2
  • Corn flour 1 tbsp
  • Milk 1-1/2 cup
  • Sugar 1/2 cup
  • Cream cheese 5 cubes
  • Vanilla essence 1/2 tsp

For Meringue:

  • Egg whites 2
  • Caster sugar 4 tbsp

Method:

  1. First chop cake rusk and put in oven proof bowl.
  2. Now moist it with cherry syrup and spread in sauce pan with cherries, beaten egg yolks, corn flour and sugar.
  3. Then add milk, cook on low flame and stir it continuously until custard boils and becomes thick.
  4. After that put cream cheese cubes and stir it until it dissolves.
  5. Now take it out, add vanilla essence, chill it and put on baked cake rusk and cherries.
  6. Then beat egg whites, add caster sugar until fluffy.
  7. Then spread on meringue in some distance and bake in preheated oven on 200 degrees C for 10 minutes until light golden.
