Sabzi Kheer by Chef Gulzar

Ingredients:
- Bottle gourd 1 to 2
- Milk 1 liter
- Rice 4 tbsp
- Khoya 125 gm
- Kewra essence few drops
- Cardamom powder ½ tsp
- Centaurea 5 gm
- Tukhm imli kla 5 gm
- Sugar 1 cup
- Ghee 4 tbsp
- Dry fruits for garnish
Method:
- First peel bottle gourd, take out seeds and grate it.
- In a pan, put ghee, heat it, put grated bottle gourd and cardamom powder, roast it and cool mixture.
- Now add milk and sugar and cook on low flame.
- When milk boils and sugar dissolves, add centaurea, tukhm imli kla and grinded rice and cook it.
- When mixture becomes thick, add gm khoya and mix it.
- Before dish out, add kewra essence, mix it and dish out it.
- Garnish with dry fruits and serve.
