Chicken Pineapple Stir Fry by Zarnak Sidhwa

Ingredients:

  • Soya sauce 1/4 cup
  • Sugar 2 tbsp
  • Vinegar 1 tbsp
  • Ketchup 1 tbsp
  • Ginger 1/2 tsp
  • Minced garlic 1 tbsp
  • Corn flour 1 tsp
  • Chicken breast (cut into 2-inch strips) 1/2 kg
  • Oil 2 tbsp
  • Carrot 1
  • Capsicum 1
  • Peas 1/2 cup
  • Pineapple chunks (drained)
  • Pineapple juice 1/4 cup
  • Boiled or stir fried rice 1 cup

Method:

  1. Mix soya sauce, sugar, vinegar, ketchup, ginger, minced garlic, corn flour with reserved cup pineapple juice in small bowl.
  2. In large pan, stir-fry chicken in hot oil 5 minutes.
  3. Add vegetables, stir-fry few more minutes.
  4. Stir in pineapple and sauce, heat through.
  5. Serve over boiled or stir fried rice.
