Tomato Ka Kutt by Zarnak Sidhwa

Ingredients:

  • Tomatoes 1 kg
  • Tamarind water 1/3 cup
  • Water 2 cups
  • Garlic 1 tbsp
  • Cumin seeds (dry roasted and grinded) 1 tsp
  • Bengal gram (dry roasted and grinded) 1 tsp
  • Turmeric powder 1/2 tsp
  • Red chilli powder 2 tsp
  • Coriander powder 1/2 tsp
  • Eggs 3
  • Salt to taste
  • Curry leaves as required

For Bhagar:

  • Onion (small) 1
  • Curry leaves as required
  • Mustard seeds as required
  • Chopped garlic as required
  • Cumin seeds as required
  • Red chilli as required

Method:

  1. Clean the tomatoes thoroughly.
  2. Cut them in four pieces and put them on the stove.
  3. Include 2 cups of water, tamarind water and salt and let it cook for ten to fifteen minutes.
  4. After it has been cooked and the tomatoes have become soft sieve the pulp by squeezing all the water from it.
  5. In the water left behind add one tbsp garlic, cumin, some curry leaves, dry roasted Bengal gram powder, turmeric powder, red chilli powder, and coriander powder.
  6. Let it cook for five minutes.
  7. Fry three boiled eggs and add them in the kutt.
  8. Bhagar with onion, curry leaves, mustard seeds, garlic, cumin seeds, and red chilli.
