Karnataka Rice by Chef Gulzar

Ingredients:

  • Rice 1-1/2 cup
  • Gram 2 tbsp
  • Black lentil 2 tbsp
  • Mustard seed 1 tsp
  • Crushed red chili 1 tsp
  • Turmeric powder 1/2 tsp
  • Ginger paste 1/2 tsp
  • Green chilies 3 to 4
  • Curry leaves 5 to 6
  • Almond pistachio 1/2 cup
  • Cashew nut as required
  • Lemon juice 2 to 3 tbsp
  • Chopped green coriander 1/2 bunch
  • Oil 1 tbsp
  • Salt to taste

Method:

  1. First wash rice nicely and soak it.
  2. Boil water and salt in one pot and half boil the rice.
  3. Then strain water of rice and dry it.
  4. Wash black lentil and gram lentil, clean it and soak for a while.
  5. Now in a pan, heat oil and fry almond pistachio lightly.
  6. Then in another pan, heat oil and roast mustard seed.
  7. Then add curry leaves, ginger paste, green chilies, crushed red chili, cashew nut, black lentil,  gram lentil and turmeric powder and cook till light brown.
  8. When all ingredients becomes one, then add lemon juice, salt and as required water and cook on high flame for  5 to 7 minutes.
  9. Now put boiled rice and simmer it.
  10. Now take out rice in dish, garnish with green coriander and serve.
