Chicken Kimchi Melt by Zarnak Sidhwa

Ingredients:
- Bran bread slices 4
- Boneless chicken thighs 250 gm
- Kimchi 1 cup
- Mozzarella cheese 4 slices
- Salt 1 tsp
- Black pepper powder 1 tsp
- White pepper powder 1 tsp
- Mustard paste 2 tbsp
- Butter 2 tbsp
- Jalapeno 2
- Mayonnaise 2 tbsp
Method:
- Mix the salt, black pepper, and white pepper in the boneless chicken thighs, saute and shred the chicken.
- Mix mayonnaise and mustard paste, jalapeno, shredded chicken, and kimchi in a bowl.
- Butter one side of each slice bread.
- Place the buttered side of one slice of bread in a heated pan and top with the chicken salad mixture followed by the cheese and the second slice of bread with the buttered side face up.
- Grill until golden brown on both sides and the cheese has melted.
