Chicken Kimchi Melt by Zarnak Sidhwa

Ingredients:

  • Bran bread slices 4
  • Boneless chicken thighs 250 gm
  • Kimchi 1 cup
  • Mozzarella cheese 4 slices
  • Salt 1 tsp
  • Black pepper powder 1 tsp
  • White pepper powder 1 tsp
  • Mustard paste 2 tbsp
  • Butter 2 tbsp
  • Jalapeno 2
  • Mayonnaise 2 tbsp

Method:

  1. Mix the salt, black pepper, and white pepper in the boneless chicken thighs, saute and shred the chicken.
  2. Mix mayonnaise and mustard paste, jalapeno, shredded chicken, and kimchi in a bowl.
  3. Butter one side of each slice bread.
  4. Place the buttered side of one slice of bread in a heated pan and top with the chicken salad mixture followed by the cheese and the second slice of bread with the buttered side face up.
  5. Grill until golden brown on both sides and the cheese has melted.
