Malai Masala Chicken by Zarnak Sidhwa

Ingredients:

  • Chicken boneless 1/2 kg
  • Yogurt 250 gm
  • Fresh cream 1/2 cup
  • Green chilies chopped 3–4
  • All spice 1 tsp
  • Crushed cumin 1 tsp
  • Nutmeg mace powder 1/2 tsp
  • Black pepper powder 1/2 tsp
  • Coriander leaves 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Lemon juice 2 tbsp
  • Papaya paste 3 tbsp
  • Aluminum foil as required
  • Salt to taste

Method:

  1. Preheat the oven at 200 degrees centigrade.
  2. Cut boneless chicken into cubes, marinate with salt to taste, lemon juice and raw papaya paste.
  3. In another bowl mix together thick yogurt, fresh cream, all spice, black pepper, crushed cumin, ginger garlic paste, nutmeg mace powder, coriander leaves and green chilies.
  4. Now coat marinated chicken with yogurt mixture.
  5. Put 3 to 4 cubes of marinated chicken in each aluminum foil piece.
  6. Wrap and make in to packet.
  7. Bake in a preheated oven at 200 degrees for 10 – 12 minutes.
  8. Remove in a platter, garnish with onion rings, lemon wedges, and mint leaves.
  9. Serve with raita.
