Cafrael Chicken by Zarnak Sidhwa

Ingredients:

  • Chicken drumsticks 1/2 kg
  • Chopped ginger a 1-inch piece
  • Chopped garlic 3-4 cloves
  • Chopped coriander leaves a few
  • Chopped spring onions 3-4
  • Cinnamon 2 sticks
  • Cloves 2 tsp
  • Pepper 2 tsp
  • Cumin 2 tsp
  • Coriander seeds 2 tsp
  • Onions julienne 2
  • Green chillies 8
  • Vinegar 2 tbsp
  • Sugar 2 tbsp
  • Turmeric 1/4 tsp
  • Butter 2 dollops
  • Oil 4 tsp

Method:

  1. Add cinnamon, cloves, pepper, cumin, and coriander seeds in a pan.
  2. Roast them all together and transfer to a grinder.
  3. Add ginger, garlic, coriander leaves, and spring onion to the grinder.
  4. Dry roast green chilies in a pan and transfer to the grinder.
  5. Now add vinegar, sugar, and chopped coriander leaves along with a little water and grind to a paste. Cafrael masala is ready.
  6. Marinate the chicken with this masala. Heat oil add onions and fry them till golden, keep aside, add oil in the pan again and cook the marinated chicken legs in it.
  7. Add the fried onion back to the pan and mix it well.
  8. Add butter and stir. Serve.
