Roghni Korma by Zarnak Sidhwa

Ingredients:

  • Salt 1-1/2 tsp
  • Chicken 1 kg
  • Chopped onion 2
  • Yogurt 1 cup
  • Garlic 6 cloves
  • Ghee 1/2 cup
  • Bay leaf 1
  • Whole spices 1 tbsp
  • Button red chili 12
  • Poppy seeds 1 tbsp
  • Coriander seeds 1-1/2 tsp

Method:

  1. Grind button red chilies, garlic cloves, poppy seeds and whole coriander seeds.
  2. Heat ghee, fry the onion, add the bay leaf, mixed whole spices and add the ground masala paste and fry well till ghee comes on top.
  3. Then add beaten yogurt with chicken fry well for 10 minutes and then add 1 cup water.
  4. Add salt, cover the pan and simmer on low flame till chicken tender and thick gravy remains.
