Banana Brownies by Zarnak Sidhwa

Ingredients:
- Flour 3/4 cup
- Baking soda 1/2 tsp
- Salt 1/2 tsp
- Unsalted butter 1/2 cup
- Chopped chocolates 8 oz
- Caster sugar 3/4 cup
- Brown sugar 1/2 cup
- Eggs 2
- Vanilla essence 1 tsp
- Bananas mashed 2-3
- Chopped walnuts 1 cup
Method:
- In a bowl, sift flour and baking soda, add salt and keep it aside.
- Melt 1/4 cup butter with chocolate in bowl, set over pan of simmering not boiling water and let melt.
- Set aside to cool for a while.
- Beat remaining butter with caster sugar and brown sugar, add eggs, vanilla essence, bananas, walnuts and chocolate and butter mixture.
- Fold in flour mixture.
- Pour into greased and lined tin and bake at 180 degrees C for 30-35 minutes or until a skewer inserted in center comes out with a few crumbs attached to it.
- Let tin cool on wire rack.
- Once completely cool, cut in squares.
