Banana Brownies by Zarnak Sidhwa

Ingredients:

  • Flour 3/4 cup
  • Baking soda 1/2 tsp
  • Salt 1/2 tsp
  • Unsalted butter 1/2 cup
  • Chopped chocolates 8 oz
  • Caster sugar 3/4 cup
  • Brown sugar 1/2 cup
  • Eggs 2
  • Vanilla essence 1 tsp
  • Bananas mashed 2-3
  • Chopped walnuts 1 cup

Method:

  1. In a bowl, sift flour and baking soda, add salt and keep it aside.
  2. Melt 1/4 cup butter with chocolate in bowl, set over pan of simmering not boiling water and let melt.
  3. Set aside to cool for a while.
  4. Beat remaining butter with caster sugar and brown sugar, add eggs, vanilla essence, bananas, walnuts and chocolate and butter mixture.
  5. Fold in flour mixture.
  6. Pour into greased and lined tin and bake at 180 degrees C for 30-35 minutes or until a skewer inserted in center comes out with a few crumbs attached to it.
  7. Let tin cool on wire rack.
  8. Once completely cool, cut in squares.
