Chandi Korma by Shireen Anwer

Ingredients:

  • Chicken 1 kg or 12 pieces
  • Ginger garlic paste 1 tbsp
  • Yogurt 1 cup
  • Salt 1-1/2 tsp
  • White pepper 1/2 tsp
  • Cardamom powder 1/2 tsp
  • Chopped onion 1 cup
  • Green chilies grinded 1 tsp
  • Khoya 1/2 cup
  • Cream 4 tbsp
  • Kewra water 1 tsp
  • Melon seeds 1 tbsp
  • Almonds 8
  • Sliced almonds 2 tbsp
  • Sliced pistachio 1 tbsp
  • Silver paper for garnish
  • Oil 1/2 cup

Method:

  1. Marinate chicken  with ginger garlic paste, yogurt, salt, white pepper and cardamom powder for 1 hour.
  2. Now heat oil and fry chopped onion until soft.
  3. Then put green chilies grinded and khoya and cook for 5 minutes.
  4. Then add almonds and melon seeds and cook for 5 minutes.
  5. Now put marinated chicken, fry for 10 minutes, cover it and keep on simmer for 10 minutes until tender.
  6. Then put cream and kewra water.
  7. For serving: Keep chicken pieces in serving plate and put gravy on top.
  8. Then garnish with silver paper.
  9. Also put sliced almonds and sliced pistachio.
