Focaccia Bread by Zarnak Sidhwa

Ingredients:
- Flour 3 cups
- Warm water 1-1/4 cup
- Yeast 2-1/2 tsp
- Sugar 4 tsp
- Olive oil 1/4 cup
- Olive oil 2 tbsp for drizzling
- Salt 1-1/2 tsp
- Italian seasoning 1 tsp
- Crushed red chilli 1/2 tsp
- Thinly sliced onion 1 small
- Sliced green capsicum 1
- Jalapeno sliced 1
- Coarse sea salt to sprinkle
Method:
- In mixing bowl, add warm water.
- Make sure water should not be hot, it should be just warm, as hot water would kill your yeast.
- Now add yeast, sugar, salt, oil and flour.
- Mix all ingredients together, so that all dough will come together and form a ball.
- After mixing dough will be sticky.
- Now generously coat palm of your hands with oil, lift sticky dough, and place it in a square greased pan.
- Cover it with cloth or cling wrap and set aside.
- Let it rise until it gets double in volume.
- It will take approximately 1-2 hours depending on the weather.
- Lightly oil your fingertips and press slightly into dough to make a few dimples.
- Sprinkle Italian seasoning, crushed red chili, and the remaining 2 tbsp olive oil.
- Spread thinly sliced onion, capsicum and jalapenos all over dough.
- Preheat oven to 200 degrees C.
- Sprinkle coarse sea salt all over and bake it for 20-25 minutes or until the top is light brown.
