Coconut Chicken Adobo by Zarnak Sidhwa

Ingredients:

  • Chicken 1 kg
  • Vinegar 1/2 cup
  • Fish sauce or Soya sauce 2 tbsp
  • Garlic 3 cloves
  • Bay leaf 1
  • Coconut milk 3/4 cup
  • Ground paprika 1/2 tsp
  • Crushed red chilies 1/2 tsp
  • Black pepper 1/4 tsp
  • Oil 2 tbsp

Method:

  1. Combine chicken with vinegar, 2 cups water, fish sauce, garlic and bay leaf.
  2. Bring liquid to boil, then reduce to a simmer.
  3. Allow chicken to simmer, uncovered, for 25-30 minutes, until tender.
  4. With a slotted spoon, remove chicken from the braising liquid and transfer to plate.
  5. Turn the heat up and reduce until sauce is thick enough to coat the back of spoon (about 10 minutes more).
  6. Stir in coconut milk, paprika, crushed red chilies and black pepper.
  7. Heat oil, add chicken pieces, sear until golden brown and crispy.
  8. Return chicken to sauce to turn so they are coasted all round.
  9. Serve hot with boiled rice on side.
