Lava Cake by Zarnak Sidhwa

Ingredients:
- Butter as needed
- Egg yolks 2
- Eggs 2
- Caster sugar 3 tbsp
- Chopped dark chocolate 3-1/2 ounces
- Butter 5 tbsp
- Cocoa powder 4 tsp
- Flour 3 tbsp
- Salt 1 pinch
- Vanilla essence 1/4 tsp
- Icing sugar (to dust) 2 tbsp
Method:
- Whisk together egg yolks, eggs, and sugar in bowl until light.
- Melt chocolate and butter in double boiler or microwave oven.
- Stir melted chocolate mixture into egg and sugar mixture until combined.
- Sift cocoa powder, flour, and salt into mixture, stir to combine into batter.
- Add vanilla essence.
- Divide batter evenly between 4 greased ramekins, tap gently on counter to remove any air bubbles.
- Refrigerate for 30 minutes.
- Arrange ramekins in a tin or casserole dish.
- Pour enough hot water into casserole dish to reach halfway up sides of ramekins.
- Bake in preheated oven at 220 degrees C for 15-18 minutes.
- Loosen the edges from ramekin with a knife.
- Invert each cake onto plate and dust with powdered sugar. Serve immediately.
