Batair Pulao by Chef Gulzar

Ingredients:
- Quail 6-8
- Rice (Sella) 300 grams
- Ginger garlic paste 2 tbsp
- Onion 2
- Yogurt 250 grams
- Bay leaf 2-3
- Clove 4-5
- Black cardamom 3-4
- Cinnamon 2-3
- Cumin 1 tsp
- Black pepper 1 tsp
- Black pepper crushed 1 tsp
- Red chilli powder 2 tbsp
- Coriander seeds powder 1/2 tsp
- Chicken cube 1-2
- Green chillies 2-3
- Mint 1/2 bunch
- Coriander 1/2 bunch
- Yellow food colour1 pinch
- Ghee 1/2 cup
- Salt to taste
Method:
- For quail: Clean quail, coat with yogurt and keep it aside. Then wash it.
- For pulao: Heat ghee in pan, fry onion to until brown, take out of half onion and keep it aside.
- Now put bay leaves, clove, big cardamom, cinnamon, whole cumin and whole black pepper in this ghee and roast it.
- Then add ginger garlic paste, roast it and add quail.
- Now put crushed black pepper, red chili powder, whole coriander powder, chicken cube, green chilies, mint, green coriander and salt and roast it.
- Then put chicken cube and required water and cook until it becomes stock.
- Now add rice, mix it and cook it.
- When rice is ready and put remaining half onion yellow food color when simmering and simmer it.
- Then dish it out and serve.
