Batair Pulao by Chef Gulzar

Ingredients:

  • Quail 6-8
  • Rice (Sella) 300 grams
  • Ginger garlic paste 2 tbsp
  • Onion 2
  • Yogurt 250 grams
  • Bay leaf 2-3
  • Clove 4-5
  • Black cardamom 3-4
  • Cinnamon 2-3
  • Cumin 1 tsp
  • Black pepper 1 tsp
  • Black pepper crushed 1 tsp
  • Red chilli powder 2 tbsp
  • Coriander seeds powder 1/2 tsp
  • Chicken cube 1-2
  • Green chillies 2-3
  • Mint 1/2 bunch
  • Coriander 1/2 bunch
  • Yellow food colour1 pinch
  • Ghee 1/2 cup
  • Salt to taste

Method:

  1. For quail: Clean quail, coat with yogurt and keep it aside. Then wash it.
  2. For pulao: Heat ghee in pan, fry onion to until brown, take out of half onion and keep it aside.
  3. Now put bay leaves, clove, big cardamom, cinnamon, whole cumin and whole black pepper in this ghee and roast it.
  4. Then add ginger garlic paste, roast it and add quail.
  5. Now put crushed black pepper, red chili powder, whole coriander powder, chicken cube, green chilies, mint, green coriander and salt and roast it.
  6. Then put chicken cube and required water and cook until it becomes stock.
  7. Now add rice, mix it and cook it.
  8. When rice is ready and put remaining half onion yellow food color when simmering and simmer it.
  9. Then dish it out and serve.
