Balushahi by Zarnak Sidhwa

Ingredients:

  • Flour 350 gm
  • Ghee 100 gm
  • Baking soda 1/4 tsp
  • Salt a pinch
  • Boiling water 75 ml or more for kneading
  • Oil for deep-frying

For Sugar Syrup:

  • Sugar 400 gm
  • Water 250 ml
  • Saffron strands a few (optional)

Method:

  1. Mix flour, ghee, soda, and salt well using two fingers and knead to soft dough, adding boiling water little at a time.
  2. Shape into balls, flatten a bit and press center with your thumb.
  3. Heat oil and fry first on medium flame then low, till well cooked.
  4. To prepare sugar syrup: Boil sugar and water till a one-thread consistency is reached.
  5. Add saffron strands.
  6. Soak balushahi in sugar syrup for 5-10 minutes, strain out the syrup.
  7. Serve on flat platter.
