Mexican Rice Pudding by Zarnak Sidhwa

Ingredients:
- Rice 1 cup
- Unsalted butter 2 tbsp
- Water 2 cups
- Milk 2 cups
- Flour 1 tbsp
- Caster sugar 1/3 cup
- Egg 1
- Vanilla essence 1-1/2 tsp
- Milk 1 cup
- Cream 2/3 cup
- Raisins 1/2 cup
- Ground cinnamon 1/2 tsp
Method:
- Bring rice, butter and water to boil in large saucepan.
- Cover and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.
- Whisk together milk, flour, sugar, egg, and vanilla essence i bowl and pour milk mixture over cooked rice.
- Stir to combine and simmer over low heat for 15 minutes.
- Stir in 1 cup milk, cream, raisins, and cinnamon until thoroughly mixed, and allow to cool for few minutes.
- Serve warm or cold.
