Vegetable Kofta by Zubaida Tariq

Ingredients:
- Boiled potatoes 4
- Peas 1 cup
- Chicken 1/2 kg
- Grated carrot 1
- Chopped green chilies 4
- Roasted cumin powder 1 tsp
- Crushed black pepper 1 tsp
- Red chili flakes 1 tsp
- Rice flour 1/2 cup
- Mint leaves 1/2 bunch
- Green coriander 1/2 bunch
- Salt to taste
- Egg whites 2
For Garvy:
- Chopped onions 3
- Chopped soya 2 bunches
- Turmeric 1 tsp
- Ginger garlic 1 tbsp
- Red chili 1 tbsp
- Salt to taste
- All spice powder 1 tsp
- Butter 1 tbsp
- Oil 1 cup
- Green chilies 4
Method:
- Boil chicken with black pepper and 4 garlic cloves.
- Stir fry peas and grated carrot in oil and mash it.
- Then grind chicken in chopper. Now peel boiled potatoes and mash with fork.
- Then put mashed potatoes, carrot, peas, chopped green chilies, mint leaves, coriander leaves and chicken in one bowl and mix it nicely.
- Now mix cumin powder, red chili flakes, black pepper and green chilies nicely.
- Then grease your hands and make small small koftay.
- Then dip koftay in egg whites and shallow fry in hot oil.
- Heat oil in pot, do chopped onion golden brown and spread on tissue.
- When it becomes crisp, crush with hands.
- Then put ginger garlic, onion, red chili, turmeric, all spice powder and chopped soya, roast it lightly and spread fried koftay.
- Then add 1 cup hot water, green chilies and salt and keep on simmer.
- Put butter after 2 minutes and keep on simmer.
- Vegetable kofta is ready.
