Jumbo Chocolate Cupcakes by Shireen Anwer

Ingredients:

  • Butter 8 oz
  • Sugar 8 oz
  • Flour 6 oz
  • Coco powder 2 oz
  • Baking powder 2-1/2 tsp
  • Eggs 4
  • Vanilla essence 1 tsp
  • Milk 1/4 cup

For Butter Cream Icing:

  • Butter 4 oz
  • Icing sugar 8 oz
  • Coco powder 3 tbsp
  • Coffee 1 tsp
  • Water 1 tbsp
  • Chocolate grated for decoration

Method:

  1. Beat butter and sugar until light and creamy.
  2. Now strain flour, coco powder and baking powder and keep it aside.
  3. Then put 1 by 1 eggs in butter and sugar mixture.
  4. Also add strained flour and coco powder mixture.
  5. Then fold in remaining flour and coco powder mixture.
  6. Now mix milk and vanilla essence.
  7. Then put mixture nicely in greased muffin pan and bake in preheated oven on 180 degrees C for 25 minutes.
  8. Then take it out, cool it and spread butter cream icing.
  9. Now decorate with grated chocolate.
  10. For butter cream icing: Beat butter and icing sugar until light and fluffy.
  11. Now add coco powder and coffee water mixture and beat it nicely.
  12. Then put in cupcakes and put grated chocolate on top.
