Cheesecake by Zarnak Sidhwa

Ingredients:
For Base:
- Biscuits crumb 1 packet
- Butter 1/2 cup
For Filling:
- Cream cheese 2 cups
- Caster sugar 2 tbsp
- Cream 2 cups
- Vanilla essence 1/2 tsp
- Gelatin 1 tbsp
- Milk 1/4 cup
- Chocolate chips 1/2 cup
Method:
- Melt butter, mix with biscuit crumbs.
- Press in base of 9 inch springform tin and freeze till set.
- Meanwhile make filling. Put gelatin in milk in pan and let get foamy.
- Heat very gently. Do not boil. Set aside.
- Beat cream cheese and add i caster sugar gradually, fold in cream and add essence, cooled gelatin and milk mixture.
- Pour over base, level out, sprinkle chocolate chips and freeze.
- Remove from freezer after few hours and keep in refrigerator.
- Slice and serve.
