Grilled Fish & Cheese Toast by Zarnak Sidhwa

Ingredients:
- Surmai fish 1/2 kg
- Cheese 100 grams
- Flour 1 tbsp
- Cumin powder 1/2 tsp
- Onion 1 (small)
- Green chillies 4
- Vinegar 1 tbsp
- Black pepper powder 1/2 tsp
- Salt to taste
- Mustard powder 1/2 tsp
- Milk 1/2 cup
- Chopped coriander leaves 1/2 bunch
- Thin slice of butter 1
- Bread 8 slices
- Oil 1 tbsp
- Tomato ketchup 1 tbsp
Method:
- In saucepan, boil fish by adding 2 cups of water, salt, onion (chopped into big pieces), 2 green chillies (slit open), cumin powder and vinegar.
- After fish is boiled, let it cool and then flak fish.
- Strain fish water and set it aside.
- In another saucepan, heat butter and oil.
- Remove saucepan from stove.
- Now add flour, salt, pepper powder, mustard powder and mix.
- Slowly add fish water and keep on mixing.
- Then add milk and keep on mixing.
- See that no lumps are formed.
- Then put this mixture on stove and keep on mixing. Now add cheese.
- After cheese melts, add flaked fish in mixture.
- Keep on mixing till a smooth paste is formed.
- Remove from fire and add chopped coriander, 2 green chillies chopped and tomato ketchup.
- Let it cool to room temperature.
- Apply this mixture on the bread and put it in a preheated oven and grill for 15 minutes.
