Chocolate Chiffon Pie by Zarnak Sidhwa

Ingredients:
- Rich tea biscuits 175 gm
- Unsalted butter 120 gm
- Plain chocolate 60 gm
- Cream cheese 400 gm
- Condensed milk 1 can
Method:
- Preheat oven to 190 degrees C/375 degrees F/Gas mark 5.
- Place biscuits in food processor and blend till fine crumbs form.
- Melt butter and add it to the biscuit crumbs.
- In 8-9 inch pie dish, add crumbs and press mixture on bottom and side of dish.
- Bake crush for 7-8 minutes.
- Cool on wire rack.
- Place chocolate in bowl over pan of gently simmering water, stirring often until melted.
- Beat cream cheese, sweetened condensed milk with an electric mixer until blended.
- Slowly pour melted chocolate.
- Beat until smooth.
- Pour chocolate mixture into cooled biscuit crust and refrigerate overnight.
