Bhindi Bites by Zarnak Sidhwa

Ingredients:
- Okra 1/2 kg
- Zucchini 2
- Oil as required
- Onion 2
- Garlic paste 1 tbsp
- Ginger paste 1 tbsp
- Tomatoes 2
- Coriander powder 1 tsp
- Garam masala 1/2 tsp
- Red chili 1 tsp
- Turmeric powder 1/2 tsp
- Black pepper 1 tsp
- Salt to taste
- Carom seeds 1/2 tsp
- Coriander seeds 1/2 tsp
- Green chilies 6-8
- Peanuts as required
- Fresh coriander 1/2 bunch
- Cottage cheese 1 cup
- Lemon juice 1/2 lemon
- French bread 1 loaf
Method:
- Cut okra and zucchini in cubes and deep fry them.
- Now for masala: Heat oil, add onion, ginger paste and garlic paste.
- When golden, add tomatoes, all coriander powder, garam masala, red chili, turmeric powder, black pepper, salt, carom seeds, coriander seeds, green chilies and peanuts.
- Then add chopped coriander and bit of cheese.
- Squeeze little lemon juice when ready.
- Serve with chutney and French bread.
- To serve: Cut sliced of French bread, toast them in an oven or on pan.
- Put okra on edge of bread slice, topped with few drops of fig chutney.
- Serve immediately.
