Bhindi Bites by Zarnak Sidhwa

Ingredients:

  • Okra 1/2 kg
  • Zucchini 2
  • Oil as required
  • Onion 2
  • Garlic paste 1 tbsp
  • Ginger paste 1 tbsp
  • Tomatoes 2
  • Coriander powder 1 tsp
  • Garam masala 1/2 tsp
  • Red chili 1 tsp
  • Turmeric powder 1/2 tsp
  • Black pepper 1 tsp
  • Salt to taste
  • Carom seeds 1/2 tsp
  • Coriander seeds 1/2 tsp
  • Green chilies 6-8
  • Peanuts as required
  • Fresh coriander 1/2 bunch
  • Cottage cheese 1 cup
  • Lemon juice 1/2 lemon
  • French bread 1 loaf

Method:

  1. Cut okra and zucchini in cubes and deep fry them.
  2. Now for masala: Heat oil, add onion, ginger paste and garlic paste.
  3. When golden, add tomatoes, all coriander powder, garam masala, red chili, turmeric powder, black pepper, salt, carom seeds, coriander seeds, green chilies and peanuts.
  4. Then add chopped coriander and bit of cheese.
  5. Squeeze little lemon juice when ready.
  6. Serve with chutney and French bread.
  7. To serve: Cut sliced of French bread, toast them in an oven or on pan.
  8. Put okra on edge of bread slice, topped with few drops of fig chutney.
  9. Serve immediately.
