Basic Vanilla Sponge by Sumera

Ingredients:

  • Butter 125 gm
  • Vanilla essence 2 tsp
  • Caster sugar 138 gm
  • Eggs 2
  • Plain maida 168 gm
  • Baking powder 1 tsp
  • Milk 90 ml

For Cinnamon Chocolate Cupcakes:

  • Chocolate chip 2

For Candied Orange Cupcakes:

  • Oranges 2
  • Orange zest 1 tsp
  • Orange juice 1/4 cup
  • Sugar 1 cup
  • Water 1 cup

Method:

  1. Preheat oven to 180 degrees C and line cupcakes molds with cupcake lines.
  2. Now beat butter, vanilla essence and caster sugar in medium bowl until light and fluffy.
  3. Now put eggs 1 by 1, mix milk and plain maida and stir it.
  4. Now divide batter in three parts.
  5. Put one part on 4 cupcakes and keep orange thin slice.
  6. For syrup: Boil sugar and water on low flame for 30-40 minutes.
  7. Now cool on wire rack.
  8. Mix orange zest and orange juice in one part of batter nicely and put on 4 cupcakes.
  9. Mix cinnamon chocolate chip in last part of batter and put on cupcakes.
  10. Bake for 15-20 minutes until toothpick comes out clean.
