Ingredients:

For Batter:

  • Mash flour 250 gm
  • Garlic paste 3 tbsp
  • Salt 1/2 tsp
  • Water 1 cup

For Masala:

  • Yogurt 1 kg
  • Green chilies 10
  • Mint leaves 15
  • Coriander leaves 1 bunch
  • Salt to taste
  • Water 2 cups

For Bhagar:

  • Cumin 1 tbsp
  • Red chilies 5
  • Oil 5 tbsp

To Make Papri:

  • White flour 1 cup
  • Salt & cumin water 1/4 cup

Method:

  1. Beat mash flour, garlic paste, salt and water in bowl until fluffy.
  2. Put it aside for 15 minutes, batter is ready.
  3. Blend green chilies, mint leaves, coriander leaves, salt and water.
  4. Mix blended ingredients with yogurt.
  5. Now, on medium heat, fry pakoras, till golden brown.
  6. Dip fried pakoras in tape water for 30 seconds, take out and arrange in platter.
  7. Pour prepared yogurt masala on pakoras.
  8. To prepare bhagar: Heat oil, add cumin seeds, button red chilies and fry.
  9. Pour bhagar on platter and garnish with papri.
  10. To prepare papri: Mix white flour with salt and cumin water to make hard dough.
  11. Make small balls and flat with hands.
  12. Fry on slow flame.
