Pineapple Hibiscus Cake by Sumera And Rabia

Ingredients:

  • Oil 1/2 cup
  • Eggs 3
  • All purpose flour 1-1/2 cup
  • Baking powder 2 tsp
  • Caster sugar 1/2 cup
  • Cinnamon powder 1/2 tsp
  • Grated carrots 2 cup
  • Pineapples crushed 1/2 cup

For Pineapple Flowers:

  • Caster sugar 1 tbsp
  • Water 1 tbsp
  • Pineapple slices 4-5

Method:

  1. Preheat oven to 120 degrees C.
  2. Line 9 inc round cake pan with baking paper and grease sides.
  3. Now put eggs, oil, flour, caster sugar and cinnamon powder in medium bowl, mix it and stir until it becomes one.
  4. Then mix in grated carrots and pineapple crushed.
  5. Now put batter in cake pan and bake in oven on 180 degrees C for 40 minutes until toothpick comes out clean.
  6. For pineapple flowers: Put caster sugar and water in sauce pan and mix on low flame until sugar dissolves.
  7. Then brush pineapple slices on both sides with sugar syrup.
  8. Now make one layer of slices on wire rack and dry in oven for 1 hour.
  9. Then take it out immediately, remove slices from rack, punch each slice on center and give shape of flower.
  10. Then dry it, put on top and cover with foil.
