Thandai by Zarnak Sidhwa

Ingredients:

  • Milk 1 liter
  • Caster sugar 1/2 cup
  • Saffron few
  • Pistachios 2

To Be Ground Into A Fine Powder:

  • Almonds 1/4 cup
  • Poppy seeds 2 tbsp
  • Fennel seeds 2 tbsp
  • Cardamom 1/2 tsp
  • White peppercorns 20
  • Dry rose petals 12-15

Method:

  1. Boil milk.
  2. Add sugar to milk, let it cook till well blended.
  3. Allow milk to cool completely.
  4. Keep aside.
  5. Add ground powder and mix well.
  6. Refrigerate mixture for 3-4 hours.
  7. Strain mixture through a sieve, add few strands of saffron and mix well.
  8. Refrigerate n serve chilled.
