Peanut Butter Pie by Zarnak Sidhwa

Ingredients:

  • Chocolate cookie crumbs 1-1/4 cups
  • Caster sugar 1/4 cup
  • Butter 1/4 cup
  • Cream cheese 8 oz
  • Creamy peanut butter 1 cup
  • Caster sugar 1 cup
  • Unsalted butter 1 tbsp
  • Vanilla extract 1 tsp
  • Cream 1 cup

Method:

  1. Preheat oven to 190 degrees C.
  2. Combine cookie crumbs, caster sugar and butter and press into a 9 inch pie plate.
  3. Bake in preheated oven for 10 minutes.
  4. Cool on wire rack.
  5. In mixing bowl, beat cream cheese, peanut butter, caster sugar, butter and vanilla until smooth.
  6. Whip cream and fold into peanut butter mixture.
  7. Gently spoon filling into crust.
  8. Garnish pie with chocolate or cookie crumbs if desired.
  9. Refrigerate for several hours before serving.
