Ingredients:
- Almonds 1 cup
- Icing sugar 1-2/3 cup
- Flour 1/2 cup
- Egg whites 3/4 cup
- Unsalted butter 3/4 cup
- Orange peel 3 tbsp
- Butter 1 tbsp
- Tart molds 18 or
- Muffin tins 18 or
- Silicone tart molds 18
Method:
- Toast almonds in oven at 230 degrees C for 5 minutes.
- Let it cool and ground to make fine powder.
- Combine sugar, ground almonds and flour and then sift or force the mixture through a fine sieve into second bowl.
- The mixture should be very fine.
- Stir in unbeaten egg whites until thoroughly blended and then stir in 3/4 cup of melted butter until well blended.
- Add in chopped orange peel.
- Butter tart molds or muffin tins.
- Fill each mold with batter just to rim of mold.
- Place molds on baking sheet and place in center of preheated oven.
- Bake for 7 minutes at 230 degrees C, then reduce oven temperature to 200 degrees C and bake another for 7 minutes.
- Turn off heat and let financiers rest in oven another 7 minutes.
- Remove financiers from oven and un-mold them as soon as they have cooled.
