Saucy Chicken Breast by Zarnak Sidhwa

Ingredients:

  • Chicken breast 6
  • Flour 1/4 cup
  • Salt 1/2 tsp
  • Black pepper 1 pinch
  • Butter 3 tbsp
  • Pureed tomatoes 1 cup
  • Water 1/2 cup
  • Brown sugar 2 tbsp
  • Vinegar 2 tbsp
  • Worcestershire sauce 2 tbsp
  • Salt 1 tsp
  • Red chili powder 2 tsp
  • Mustard powder 1 tsp
  • Mince garlic 1 clove
  • Hot pepper sauce 1/8 tsp

Method:

  1. Combine flour, 1/2 tsp salt and ground black pepper.
  2. Coat chicken breasts with flour mixture.
  3. Melt butter in pan and brown chicken on all sides.
  4. Remove and drain on paper towels.
  5. In same pan, combine tomatoes, water, brown sugar, vinegar and Worcestershire sauce.
  6. Season it with salt, chili powder, mustard, garlic and hot pepper sauce.
  7. Bring to boil, reduce heat and return chicken to pan.
  8. Cover and simmer for 35-40 minutes or until chicken is tender, no longer pink and juice run clean.
