Scones by Zarnak Sidhwa

Ingredients:

  • Flour 2 cups
  • Sugar 1/3 cup
  • Baking powder 1 tsp
  • Baking soda 1/4 tsp
  • Salt 1/2 tsp
  • Unsalted butter 8 tbsp
  • Raisins or currants 1/2 cup
  • Sour cream 1/2 cup
  • Egg 1

Method:

  1. Mix flour, sugar, baking powder, baking soda and salt.
  2. Chop butter into flour mixture, till it looks like breadcrumbs.
  3. Then stir in raisins.
  4. In bowl, whisk sour cream and egg until smooth.
  5. Using fork, stir sour cream mixture into flour mixture until large dough dumps form.
  6. Use your hands to press dough against bowl into ball. (The dough will be stick in press and there may seem to be enough liquid at first, but as you press, the dough will come together).
  7. Place on lightly floured surface and pat into 7-8 inch circle about 3/4 inch thick.
  8. Sprinkle with remaining 1 tsp sugar.
  9. Use sharp knife to cut into 8 triangle; place on cookie sheet (preferably line with parchment paper), about 1 inch part.
  10. Bake until golden, about 15-17 minutes.
  11. Cool for 5 minutes and serve warm or at room temperature.
