mavenbrainbox I will give u few tips. Firstly buy ur dals from another grocery store. May be the dals taht u are purchasing are very old dals. They will not become soft. Buy from any good quality store in clifton. Then wash it 4-5 times. Then soak it in abig bowl with lots of water for 30 mins. Then if u are using 1 cup dal, add 5-6 cups water, boil few mins on high flame.Then lower heat to medium high and boil till 90 percent soft. U can test it by picking 1 grain and pressing it.
Then last 10 percent of cooking should be on lower medium flame, keep it covered. If there is still too much water, then dont cover. Do not boil for more than 30 mins. Over boiling makes it hard too. Good luck. And post ur comments after trying these tips. Finally I make shahi dal with only moong and masoor dals. I follow zakirs recipe. Its excellent.
