Caramel French Toast by Zarnak Sidhwa

Ingredients:

  • Brown sugar 1 cup
  • Butter 1/2 cup
  • Light corn syrup 2 tbsp
  • Chopped walnuts (divided) 1 cup
  • French bread 12 slices
  • Eggs 6
  • Milk 1-1/2 cups
  • Vanilla essence 1 tsp
  • Ground nutmeg 1 tsp
  • Ground cinnamon 1-1/2 tsp
  • Salt 1/4 tsp

For the Caramel Sauce:

  • Brown sugar 1/2 cup
  • Butter 1/4 cup
  • Light corn syrup 1 tbsp

Method:

  1. In small saucepan, combine brown sugar, butter and corn syrup.
  2. Cook over medium heat, stirring constantly, until thickened.
  3. Pour sauce into 9x13 inch baking dish and sprinkle with 1/2 cup walnuts.
  4. Place 6 slices of bread on top of sauce, sprinkle with remaining walnuts and cover with remaining 6 slices of bread.
  5. Combine eggs, milk, vanilla, nutmeg, cinnamon, and salt in blender.
  6. Pour egg mixture evenly over bread slices, cover baking dish and refrigerate for 8 hours or overnight.
  7. The next morning, preheat oven to 175 degrees C.
  8. Remove French toast from refrigerator 30 minutes prior to baking.
  9. Bake in preheated oven for 40 to 45 minutes, until lightly brown.
  10. Drizzle sauce over  toast right before serving.
  11. To make caramel sauce: In small saucepan, combine brown sugar, butter and corn syrup.
  12. Cook until thickened, stirring constantly.
