Ingredients:

  • Bitter gourd skin 1/2 kg
  • Gram lentil 1 cup
  • Garlic 6 cloves
  • Ginger 1 piece
  • Red chilies 8
  • Coriander seeds 1 tsp
  • White cumin 1 tsp
  • All spice some
  • Egg whites 2
  • Rice flour 2 tbsp
  • Mint leaves 1/2 bunch
  • Green coriander 1/2 bunch
  • Crushed green chili 4
  • Chopped ginger 2 tbsp
  • Oil to fry

To Wash Bitter Gourd:

  • Jaggery 1 tsp
  • Tamarind paste 1 tbsp
  • Salt to taste

Method:

  1. Put jaggery, tamarind paste and salt on bitter gourd skin without washing for 10 minutes. Now wash it.
  2. Soak gram lentil in lukewarm water.
  3. Now drain water of lentil, add salt, ginger, garlic, red chilies, all spice, coriander seeds and white cumin and boil lentil.
  4. When lentil tender, grind in chopped.
  5. Then fry bitter gourd skin lightly and add in lentil.
  6. Then mix egg whites, mint leaves, green coriander, crushed green chili and chopped ginger.
  7. Now mix flour kabab nicely, make kabab and shallow fry it in frying pan.
  8. When golden brown, take it out and serve with chili sauce.
