Ingredients:
- Bitter gourd skin 1/2 kg
- Gram lentil 1 cup
- Garlic 6 cloves
- Ginger 1 piece
- Red chilies 8
- Coriander seeds 1 tsp
- White cumin 1 tsp
- All spice some
- Egg whites 2
- Rice flour 2 tbsp
- Mint leaves 1/2 bunch
- Green coriander 1/2 bunch
- Crushed green chili 4
- Chopped ginger 2 tbsp
- Oil to fry
To Wash Bitter Gourd:
- Jaggery 1 tsp
- Tamarind paste 1 tbsp
- Salt to taste
Method:
- Put jaggery, tamarind paste and salt on bitter gourd skin without washing for 10 minutes. Now wash it.
- Soak gram lentil in lukewarm water.
- Now drain water of lentil, add salt, ginger, garlic, red chilies, all spice, coriander seeds and white cumin and boil lentil.
- When lentil tender, grind in chopped.
- Then fry bitter gourd skin lightly and add in lentil.
- Then mix egg whites, mint leaves, green coriander, crushed green chili and chopped ginger.
- Now mix flour kabab nicely, make kabab and shallow fry it in frying pan.
- When golden brown, take it out and serve with chili sauce.
