Chicken Salad by Zarnak Sidhwa

Ingredients:

  • Boiled chicken 2 cups
  • Mayonnaise 1/2 cup
  • Paprika 1/2 tsp
  • Dried cranberries 3/4 cup
  • Chopped celery 1/2 cup
  • Green onion 1
  • Green capsicum 1/4 cup
  • Chopped walnuts 1/2 cup
  • Salt 1/2 tsp
  • Black pepper to taste

Method:

  1. Mix together mayonnaise with paprika and salt.
  2. Blend in dried cranberries, celery, capsicum, onion and nuts.
  3. Add chopped chicken and mix well.
  4. Season it with black pepper and chill for an hour.
  5. Serve salad with lettuce leaves or ice berg leaves.
  6. Or place spoonful of salad in lettuce cups.
  7. This salad is great as sandwich filling or stuffed in red capsicum or whole tomatoes with its pulp removed.
