Caribbean Chicken by Zarnak Sidhwa

Ingredients:
- Boneless chicken breast 4
- Oil 1 tsp
- Chopped onions 1-1/2
- Red capsicum 1
- Green capsicum 1
- Roasted garlic 1 tbsp
- Coconut milk 1 cup
- Salt to taste
- Pepper to taste
- Red chili 1 tsp
Method:
- Fry chicken breast in oil until chicken just begins to brown.
- Stir onions, green and red capsicum into pan with chicken.
- Saute until onions are translucent.
- When vegetables are translucent, stir in garlic and coconut milk.
- Let mixture cook 5-8 minutes, before removing skillet from heat.
- Season it with salt, pepper and red chili flakes.
- Transfer the mixture to 9x13 inch baking dish and bake in 220 degrees C oven for 45 minutes or until vegetables cook down and chicken is tender.
