Khao Muk Gai by Chef Gulzar

Ingredients:
- Chicken cubes 500 gm
- Sela rice 300 gm
- Curry powder 2 tbsp
- Turmeric powder 1 tbsp
- White pepper powder 1 tbsp
- Garlic paste 3 tbsp
- Cinnamon 4-5 sticks
- Star anise 4-5
- Lemon 4-5
- Fry onion 2
- Chinese salt 1/2 tsp
- Oil 1/2 cup
- Salt to taste
Method:
- For chicken: Put oil in pot, add 2-3 star anise and cinnamon and roast it.
- Now put 2 tbsp garlic paste and fry it.
- Then put chicken, turmeric powder, curry powder, salt and Chinese salt and roast it.
- Now put water and cook until chicken is approx tendered.
- Then separate chicken pieces, strain mixture and keep stock aside.
- For rice: Now put oil in second pot, put 1-2 star anise, roast it, add 1 tbsp garlic paste and cook until garlic fragrance comes.
- Now put chicken stock and add rice and fried onion.
- When rice is ready, put chicken pieces on rice and simmer it.
- When simmer is completed, take out rice first in platter.
- Then put chicken pieces, fried onion and lemon juice and serve.
