Ingredients:

  • Brinjal 2
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Turmeric 1/2 tsp
  • Cumin roasted and grinded 1 tsp

For Batter:

  • Gram flour 1 cup
  • Salt 1/2 tsp
  • Cumin crushed 1/2 tsp
  • Chili powder 1/2 tsp
  • Turmeric 1 pinch

For Topping:

  • Yogurt 1 kg
  • Salt 1/2 tsp
  • Crushed red pepper 1/2 tsp
  • Chaat masala 1/2 tsp

For Bhagar:

  • Oil 1/4 cup
  • Curry leaves 20
  • Red chilies 6-8
  • White cumin seeds 1 tsp

Method:

  1. Marinate brinjal with all ingredients for 30 minutes.
  2. For batter: Mix all ingredients and make batter.
  3. Dip marinated brinjal in batter and deep fry it in frying pan.
  4. Then cool it and soak in water for 5 minutes.
  5. Wring yogurt in cloth. Now add salt, crushed red pepper and cumin.
  6. Then spread yogurt in dish.
  7. Put fried brinjal.
  8. Put yogurt on top.
  9. Then put bhagar of oil curry leaves, red chilies and white cumin seeds, sprinkle chaat masala and serve.
