Mexican Pizza by Zarnak Sidhwa

Ingredients:
- Beef mince 1/2 kg
- Chopped onion 1
- Crushed garlic 2 cloves
- Chili powder 1 tbsp
- Ground cumin 1 tsp
- Paprika 1/2 tsp
- Black pepper 1/2 tsp
- Salt 1/2 tsp
- Red beans 1 cup
- Flour tortillas 4
- Salsa 1 cup
- Grated cheese 2 cups
- Green onion 2
- Tomatoes 2
- Black pitted olives 1/4 cup
For Salsa:
- Chopped tomato 1
- Chopped onion 1
- Green chilies 2
- Chopped cucumber 1
- Jalapeno peppers 2
- Salt to taste
- Pepper to taste
- Lemon juice 1 lemon
Method:
- Mix all ingredients for salsa and set aside.
- Cook mince, onion and garlic until mince is evenly browned.
- Drain off grease.
- Season it with chili powder, cumin, paprika, salt and pepper.
- Coat 2 pie plates with non-stick cooking spray.
- Place one tortilla in each pie plate and cover with layer of beans.
- Spread half of second meat over each tortilla and then cover with second tortilla.
- Bake for 10 minutes in preheated oven.
- Remove from oven and allow to cool slightly.
- Spread half of salsa over top tortillas.
- Top each pizza with half of cheese, tomatoes, green onions and olives.
- Return pizza to the oven, bake until cheese is melted, about 5-10 minutes.
- Remove from oven and allow to cool slightly.
- Slice each pizza into 4 pieces and serve.
