Fig Chicken by Zarnak Sidhwa

Ingredients:
- Lemon juice 1 lemon
- Brown sugar 1/4 cup
- White vinegar 1/4 cup
- Water 1/4 cup
- Dried figs 1-1/2 pounds
- Lemon 1
- Chicken 1 kg
- Salt to taste
- Fresh parsley 1 tbsp
- Dried parsley 1 tsp
Method:
- Combine lemon juice, brown sugar, vinegar and water, set aside.
- Place figs and lemon slices in bottom of roasting dish.
- Arrange chicken on top, then pour vinegar mixture over chicken.
- Finally, sprinkle with salt and dried parsley.
- Bake roast at 200 degrees C for 50 minutes, basting frequently (turn figs if they begin to brown).
- Serve with garnished fresh parsley.
