Mint Brownie Dessert by Zarnak Sidhwa

Ingredients:

  • Caster sugar 1 cup
  • Butter 1/2 cup
  • Eggs 4
  • Chocolate syrup 1-1/2 cups
  • Flour 1 cup
  • Icing sugar 2 cups
  • Butter 1/2 cup
  • Mint essence 1 tsp
  • Butter 6 tbsp
  • Chocolate 1 cup

Method:

  1. Beat 1/2 butter and sugar until smooth
  2. Beat in eggs one at a time, then stir in chocolate syrup.
  3. Stir in flour until just blended.
  4. Spread batter evenly into greased 9x13 baking dish.
  5. Bake for 25-30 minutes at 180 degrees C or until top springs back when lightly touched.
  6. Cool completely in pan.
  7. In small bowl, beat icing sugar, 1/2 cup butter and mint essence until smooth.
  8. Pread evenly over cooled brownies, then chill until set.
  9. Melt remaining 6 tbsp butter and chocolate, stirring occasionally until smooth.
  10. Allow to cool slightly, then spread over top of mint layer.
  11. Cover and chill for at least 1 hour before cutting into squares.
