Coconut Bread Pudding by Zarnak Sidhwa

Ingredients:

  • Butter 2 tbsp
  • Icing sugar 1/2 cup
  • Caster sugar 1 cup
  • Eggs 4
  • Egg yolk 1
  • Coconut milk 2 cans
  • Ground cinnamon 1 tsp
  • Ground nutmeg 1/4 tsp
  • Salt 1/4 tsp
  • Coconut essence 2 tbsp
  • Flaked coconut 1-1/2 cups
  • Fresh coconut 1/2 cup
  • French bread 1 loaf

Method:

  1. Mix sugar, eggs, egg yolk, coconut milk, cinnamon, nutmeg, salt and coconut essence until smooth.
  2. Stir in 1 cup flaked coconut and fresh coconut.
  3. Fold in bread cubes until evenly coated.
  4. Pour into greased baking dish, earlier sprinkled with icing sugar.
  5. Set aside for 30 minutes.
  6. Put dish on cookie sheet and bake in preheated oven at 165 degrees C for 25 minutes.
  7. Sprinkle top with remaining 1/2 cup flaked coconut.
  8. Continue baking for 25-30 minutes or until center springs back when lightly tapped.
