Pao Bhaji by Chef Gulzar

Ingredients:

  • Bun 1 cup
  • Butter For Frying

Making Bhaji:

  • Boiled spinach 1 cup
  • Chopped carrot 3
  • Chopped potatoes 150 grams
  • Cauliflower 200 grams
  • Chopped tomatoes 3
  • Finely chopped onion 2
  • Ginger garlic paste 1 tbsp
  • Lemon juice 2 tbsp
  • Turmeric powder 1/2 tsp
  • All spice powder 1 tsp
  • Butter 3 tbsp
  • Salt to taste

For Garnishing:

  • Chaat masala 1 tsp
  • Finely chopped green chilies 2-3
  • Finely chopped onion 2
  • Butter 2-3 tbsp
  • Fresh coriander for garnishing

Making Raita:

  • Yogurt 1 cup
  • Roasted and chopped cumin 1 tsp
  • Red chili chopped 1 tsp
  • Salt to taste

Method:

  1. For bhaji: Add boiled spinach, carrots, cauliflower, potatoes, tomatoes and water as required water in pot and mix it nicely and roast it.
  2. Now heat butter in pan, put onions, all spice powder, ginger garlic paste and lemon juice and mix it well and roast it.
  3. Then add this mixture in vegetables, mix it nicely and cook it.
  4. Then crush it lightly and cook on low flame. Bhaji is ready.
  5. For bun: Cut bun in to parts, put butter on tawa and toast it.
  6. For Raita: Put all ingredients in mixing bowl and beat it nicely. Raita is ready.
  7. For serving: Put bhaji in serving platter and put butter.
  8. Then put finely chopped green chiles and chat masala.
  9. Then garnish with chopped onions and fresh coriander.
  10. Put hot bun and serve hot with raita.
